What is in my mind now? I AM SO PROUD OF MYSELF *round of applause*

First time ever creating my own recipe ! *record it as history*

If it wasn't because of UNSW cookbook competition, I wouldn't bother cracking my brain and I would rather just rely on the recipe books or online recipes to cook whatever I want.

Oh well, grab the golden opportunity to test your talent with no regrets in the future. I guess that is also part of the motivation from Master Chef ! come on, baby ! :)

The pictures may look alil dull and not-so-tempting to you, but they did turned out well though. And I didn't forget how succulent the meat were with the juices ! *thumbs up*



Ingredients:
1 cup Coke
1 cup Sprite
1 cup apple juice
1 1/2 tbsp dark soya sauce
1 tbsp light soya sauce
1 small onion,pieces sliced
canola oil / olive oil cooking spray
300g of meat (ie beef or pork recommended)
skewers

Method:
1. Combine dark soya sauce and light sauce over the meat.
2. Separate the meat into 4 portions with separate bowls.
3. Onto each portion, pour coke, sprite and apple juice into the bowls respectively. One of them will be left originally. Marinate for at least 2 hours. For better flavours, leave it covered
overnight in the refrigerator.
4. Heat your grilling pan with cooking oil spray. Cook the meat for at least 5 minutes on each side, to avoid overburn, or until cooked to your liking.
5. After cooking the meat, cook the onion until soft.
6. Then thread the 4 different types of flavour meat onto the skewers, alternatively with onion slices.Ready to be served.

Tips of the day:
1. Any flavours are allowed. Not only with the marinated flavours as mentioned above, you are allowed to do it with other marinating sauces such as orange with orange marmalade.
2. Besides onions, capsicums are allowed.
3. Meat pieces have to be small, the size of snack bites.
4. If beef is used, it is recommended that the texture of the meat to be medium rare and not well done.
5.Ingredients are easy to get, especially with the drinks where you can get it from your pantry.
6.Skewers are not necessary to purchase, may place on the plate, ready to be served.

1 dozen of cup cakes definitely made anyone's day ! And yet its Choc-Vanilla Cakes, so who dont love it?

Cup cakes can be taken anytime of the day whenever you feel like it. It is not necessary to be taken for a specific meal.Even though if it is, I bet your hunger would not be fully satisfied on that day, so dont blame me later on~ lalalala ~

I know you are in temptation now to have cup cakes and eager to know the recipe ! So here you go...

Ingredients needed : 125g soften unsalted butter, 1 tsp vanilla extract, 3/4 caster sugar, 3 eggs, 1/3 cup milk, 1 1/2 self-raising flour, and 2 tbsp  sifted cocoa powder

  • Preheat oven to 180degrees/160 degrees fan forced. Line a 12 hole of muffin hole with paper cases.
  • Place butter,vanilla,sugar,eggs,milk,and flour in a bowl. Then, beat at low speed with an electric mixer until combined. Beat for 2 to 3 minutes until pale.
  • Spoon 1 1/2 tbsp of mixture into each muffin hole. Add cocoa to the remaining mixture, stir to combine and spoon into each muffin holes. Swirl the mixture together with a skewer.
  • Bake for at least 20minutes and stand in a pan for 5 minutes. Turn out onto a wire rack to cool. Make sure the skewer inserted in the centre of the cake comes out clean.

Tips: The recipe suggest 2 tbps of cocoa powder but I suggest 2tbsp less, so that you would be able to have the chocolate swirl on your cup cakes instead of 2 obvious different layers. You may have additional toppings like decoration for your cup cakes, suggest choc-melts with sprinkles. You may melt the choc-melts by using microwave,not necessary by heating.

What's this time again?

Something to do with fruit ! *guess and wonders*

Just baked a few hours ago. It is meant for our breakfast tomorrow with a cup of coffee or tea. Perhaps it may be taken during your high tea hours. Its easy to bake with just one bowl mix.

Some people may not like fruity bakeries like banana cake or bread, carrot cake and etc. *same as me though* However, THIS changes my mind and perhaps you might too later on

Orange Poppyseed Loaf, AGAIN ! The word 'Loaf'  is not neceesary something to do with bread-.-

Cracks on the top do not tell anything.

That is why icing can be used most of the time for the cover-ups, just like the outside world

The easy-to-get ingredients are 2 eggs, 1 freshly squeezed orange juice(approximately 1/2 cup), 125g butter, 3/4 sugar, 1 1/2 self-raising flour and 2 tbsp of poppyseeds.

  • Preheat oven to 180degrees/160degrees fan forced. Grease the loaf pan and line base with baking paper.
  • Mix all the ingredients into the mixing bowl. Beat for 3minutes using electric mixer. Then pour the mixture into the loaf pan.
  • Bake for 50 minutes or until cooked when tested with skewer. Cool for 5minutes in the pan then turn out onto a wire rack to cool completely.

Successful ! :D

Ready to be served hot

Tips: Icing for this loaf is an optional choice, since I didnt do it. If you are going to make icing, then top the loaf with orange icing. If you dont have a loaf pan, there is another solution for you. You may bake the mixture in muffin tray. If so, you have to reduce the baking time to 20minutes. Finally, the skewer has to come out clean in order to make sure that the loaf is cooked. Besides, perhaps you would be able to use the bottled orange juice and if you would wish to have the strong flavour smell of orange for your loaf, you may add more juices.

For my loaf,although it contains orange juice but I can assure you that you wouldn't be able to taste the orange flavour from the loaf, not even the smell. This has absolutely change my perspective on certain fruity bakeries !

Bake bake bake, Cook cook cook ~

First time ever made a cheese cake ! *challenge my own skills*

Well done ! Successful ! *indeed now I know how much of dairies are used for a cake @.@*

LIME CHEESECAKE, known as Tangy Lime Pie from Simply Heaven Cookbook Volume 2.

Most of the ingredients are dairy products. Therefore, for people who have lactose intolerance, perhaps you may need to take tablets before you taste a bite or if you arren't a cheese-y person, this may not be suitable for you !

I've used digestive biscuits instead sweet biscuit crumbs, 80g butter, 250g block cream cheese, 1/4 caster sugar, 395g can condensed milk, 1/2 cup thickened cream, 2 1/2 tsp of gelatine and 4 freshly squeezed limes. These ingredients are definitely available at your nearest supermarket.

  • Smash the digestive biscuit into crumbs, approximately to 1 cup. Conbine the biscuit crumbs and melted butter. Press into base of a lightly grease fluted tart pan with a removable base. Chill until firm.
  • Meanwhile, beat the softened block cream cheese and sugar with an electric mixer until smooth, then add in the condensed milk, cream and gelatine. Also add in lime juice.
  • Pour the mixture into the prepared base and chill for at least 3hours.

cheesecake was indeed like the picture shown on the book ! perfect !

No deco of lime threads.

Please dont expect the cake to be green-ish because of lime-.-

The thickness of the cake, the mixture of all the dairies ~~ geeez >.<

The base of biscuit crumbs was uneven and not thick enough. perhaps not enough crumbs?

Tips: Butter should be melted separately from the crumbs, instead of together with the crumbs. Make sure the beating of the mixture is smooth and not with high speed of beating ! This is to prevent air from entering into the mixture which may cause the cake to collapse on cooling. Gelatine must be dissolved in 1/4 boiling water to ensure it does becomes a solution.

It wasnt as difficult as I thought it would be all along, though it wasnt an oven-baked cheesecake. Nothing is impossible if you dont try ~

Oh well, practice makes perfect !

What's HOT in summer season now?

MANGOES ! *practically can differentiate all types of mangoes from work*

Do you know that mangoes can be served in many different ways?

The easiest one that you can prepare is MANGO PUDDING ~ Oh well, you can choose to make from scratch or from instant packet.

I have chosen to use the instant packet as its already well-prepared with the mixing of gelatine powder and sugar. My instant packet is the asian packet type. Then, follow the directions given, its simple as ABC ! The process of making puddings are really quick, like making jellies, so this cooking activity isnt time-consuming at all ! Ready to be served in 30 mins(at least) after refrigerate them

In addition to these puddings, you may actually add cut pieces of mangoes to enhance the flavour, especially for mango lovers like me ! This is gonna make you feel healthy-wise, dont you think so?

Food shown in the whole of chinese textbook is always dumplings *they always eat the same food == * My chinese teacher taught me how to pronounce dumplings in pu tong hua and how to write in chinese characters. Indeed I am proud of myself.

Know the difference between wonton and dumplings? They are actually quite similar. The only difference I shall say is the way they are wrapped. They are considered to be the traditional chinese food which can be taken as appetizers or served with meals like dim sum.Besides, dumplings are also served to the guests during cny house-visiting, especially in HK and China.

Now, I have Home-Made Dumplings. It was definitely made from scratch with the ready made dumplings wrappers, if only you consider them so. It was a simple task to do within one hour. The ingredients are easy to get !

Dumplings out there are normally with pork or prawn fillings. But my fillings are chicken. Therefore, my ingredients are mince chicken, chinese mushroom, sesame oil, soy sauce, garlic,sugar and shaoxing wine. NOTE: I do not exactly follow the measurement of ingredients according to any recipe given

  • Mix 1/4 tsp of sesame oil, 1 tbsp of garlic, 1 tbsp of shaoxing wine, a pinch of sugar, chopped chinese mushroom with the 300g of mince chicken. Cover and chill for at least 30 mins.

After leaving aside, you may start your wrapping session. All you need to do is place 1 rounded tsp of the fillings in the centre of the wonton wrapper and start to fold. For how-to-wrap-dumplings method, please google it or check on other recipe books for the directions before doing so.

Tips: The fillings are of your own choice. The measurement of seasonings depends on the amount of your fillings. The adding of garlic is up to you, as not many people would like the strong smell of garlic in it. However, if you are going to use pork, you are definitely required to add-in garlic. Pleas do not add too much of sugar ! Not only chinese mushroom, you may add coriander or spring onions.

Summer season tells me its hot and sunny !

Tropical weather tells me its hot and humid !

Any temptations in your mind that makes you feel like eating or drinking which also creates hunger? Perhaps something cold down your throat, something chilling and cooling right?

There are some choices for you to choose out there. Cold. Chill. Nice. Delicious. I recommend DESSERTS and they have never been a fail option to do so.

Although I haven't been to taiwan to eat all the delicious yummy food and shop all I want yet but there is something good in town which you will never fail to see a queue for it! Its the MEET FRESH traditional taiwanese dessert at sydney ! its the most worthy dessert that you can get in the city , compare to the bubble teas now.

The traditional taiwanese dessert includes the chewy taro balls and the toppings of your choice like red beans, jellies, honey beans and etc which served with tau fu fa or herbal jelly in cold or hot. Each bowl costs AUD 5.50 and they aint small portion.

Meet Fresh Herbal Signature. It is served cold ( ice at the bottom)

I like the way where the herbal jelly is melted, not technically fully melted , at least its soft, unlike a big piece of jelly. Served with herbal jelly as the base is THE BEST !

I say its the 'Taiwanese Style ABC Ice Kacang', a variety of toppings with crushed ice at the bottom

No traditional taiwanese dessert? not to worry ! There is always a second option for it. ABC ICE KACANG with cendol *drools* Definitely you can get it anywhere and anytime in KL city at any kopitiam cafe !

Without dessert as an option, I have another suggestion for you *yes, i am always with ideas for you * What about cold beverages ? Like ice-blended drinks?

LINDT ICED DARK CHOCOLATE has always been a crave to everyone and a recommended for each one of you to have a taste. Believe me, chocolates will definitely satisfy your temptation, why not pure dark chocolate as your cold drink ? Of course, you are able to choose between white chocolate, milk chocolate and dark chocolate.

Not forgetting, Lindt cafe is also famous for their macaroons ! Not only macaroons, cakes and everything !

Strawberry & 70% pure chocolate.

When you bite the chocolate macaroon, it felt like you were biting a chocolate piece. When you bite the strawberry one, it felt like you are biting strawberry wafer. *simple and short comment*

Yes, one which is not a big fan lover of macaroons and dont really like them at all,actually recommend you to try from this cafe. As long as its the flavour you should be trying and not the pure icing with the super sweetness filled in it.

Now I would prefer mini oreos down to my stomach, rather than the standard size. This is because this really do give me and perhaps you addiction ! you know, i can just finish it in one whole night ! *shakes head* nomnomnomnom ~~

Today will be about soup ! It is indeed simple, easy and quick ! which I am pretty sure this is what all students want it to be in their life ! since we are all always have a reason for ourselves which is BUSY ! right?

White radish soup is one of my favourite soup. My mum hasn't been cooking this soup or any others for long, and even when I go back, I normally expect and crave to eat home-cooked dish but not for now anymore =( therefore, I have to cook for myself so that I can have home-cooked dish for myself. Otherwise I wil go for my friend's mum !

Cooking soup is as easy as you saying ABC. Well, some of you may find it troublesome for preparation, but its just preparing, washing and cutting them and THEN YOU DUMP IT !!

All you need for this soup would be white radish, carrot, dried cuttlefish, water and pok bones! that's all !! the amount and quantity would just depends on you ! normally 1500mL of soup would be appropriate.Boil it for at least 25-30 minutes in order to get the full taste !! It would be better if you can cook longer and avoid boiling til it gets evaporated.Optional, you may add 'gei chi' (called something berry, look in the picture below).

And now there is sweet soup for you !! a.k.a dessrt !! I LOVE DESSERT ! this is snow white fungus ! you can purchase this snow white fungus from asian supermarkets and then soak it for a moment, in order for them to be soft !

My recipe for this dessert is special because I added sweet potato into it ! some of you may find it weird but the answer from me to you would be RECOMMENDED TO TRY!! Of course,you need to cut the sweet potato into cube pieces.

Simple, easy and quick ! Go Go Go !!

Definitely a good weather today ! and tells me that its SPRING ! FINALLY ! Since I  couldn't find anything better to do besides hanging around in the city aimlessly like shopping>.< therefore, BAKING SESSION for me !

Blueberry vanilla cake !

  • Preheat oven to 180degrees/160degress (fan-forced). Spray a round or square cake pan with oil. Line and sides with 2 layers of baking papers.
  • Pour 1 cup of olive oil, 3 eggs ( DO NOT NEED TO WHISK BEFOREHAND), 3/4 caster sugar, 3 teaspoons of vanilla extract. Now, whisk all of them.
  • Meanwhile, prepare 3/4 cup of milk and 2.5 cup of self-raising flour. Then add half of the self-raising flour. NOTE: you need to sift the flour ! then stir them.
  • Later on, pour half of the milk into the bowl. Stir again to combine all the ingredients.Repeat the steps for the remaining of flour and milk.
  • After stirring everything, pour the mixture into the prepared baking pan.
  • Sprinkle the blueberries around, on top of the mixture. Bake for abt 1 hour and 10 minutes. After this time, if you think it is not ready to be served, then bake till the skewer comes out clean from the centre of cake .

It may looked 'ugly' when the cake is ready but it will perfectly fine after you cut them into pieces. Look at mine ! (below)

comments: vanilla flavour isn't strong enough

Before I end my post, a few tips for you guys !

You may cover the mixture with foil during baking to avoid over-browning. I am sure you dont want a burnt cake,for the top. If you cant find vanilla extract juice, you may use vanillia flavour essence instead, but you have to add more than 3 teaspoons (as mentioned above) ! probably 5 teaspoons, depends on how strong vanilla smell you want for your cake. Last, you may dust the top with icing sugar and serve with yoghurt !

Its been ages that we havent been seeing each other at this multiply-spot. If only I am hardworking enough to come here, instead of just Facebook or other google.

Now I would like to make 'my page' to become a foodie blog like other food bloggers where their blogs are like recipe blogs.. Here, its not only plain recipe (which you can actually get it from anywhere else, even bookstores), it will be all about food ! the special amazing food around me ~ have a try, girl !

'Butterfly' pastry a.k.a 'wu dip sou' (in cantonese) is really easy to bake and ready to be served in less than 1 hour ! Besides, you dont need to have variety of cooking wares or kitchen utensils. The ingredients are frozen pastry sheets (able to get it from any supermarket ), butter, and white or brown sugar . 

Before I forgot, if you cant get the frozen pastry sheets, then I think you would need to make your own pastry with plain flour.

  • First, the frozen pastry sheets need to be thawed for about 5 minutes,if they were kept in the freezer refrigerator. Then, place 2 sheets by facing you, spread the butter evenly onto the sheets.
  • After spreading evenly, sprinkle the sugars onto the sheets. NOTE: this pastry is supposed to be sweet, so its best if you can sprinkle more and evenly !)
  • Now you would have 2 pastry sheets with butter and sugar.With gentle, stick the 2 sheets together with the butter-side-butter.
  • It is now look like a double stack layer of sheets. Then at each upper and lower side of the edge, roll within a small diameter till half of the sheet. (you have to roll upper edge downwards and the lower edge upwards )
  • So now you would have a roll of pastry which looked like 'W'-shaped,(if you look from the side) 
  • Cut them into pieces. OPTIONAL : If you want it to look more 'shiny' , you may spread the egg white on it. Do it after you have cut them )
  • Place the pieces onto a baking tray and bake it for at least 12-15minutes. You have to flip it in after about 8 minutes to ensure an even colour on both side of the pastry. If they are not well-baked enough, then bake till your satisfaction for the crispy-ness and the colour of it.

For those who are interested in baking this, I hope you would be successful ! Hints for this pastry are the smaller size they are, the more-look alike pastry colour (golden brown-ish), the more crispy they are, then THE BETTER THEY ARE TO HAVE A BITE !

Belive me, they can make you addictive just like what chocolates can do to you !

I want a new chapter, a meaningful or memorable one in my life from now on

I really want to aim for it after what I had gone through for the 18days

At that moment, there was inspiration from heart and soul which gave me determination

Well it might be too late to realise but it should be accepted if its for a better change. Isn't so?

Really didnt want this to happen but decision has to be made

I presume most of you who keep track with my blog posts would know the date of my last paper which is TOMORROW !!!

For tomorrow's paper, I should have the so-called enough time to revise the whole 12 weeks course notes and look through the tutorial questions as well as sample paper..right???

However, I had been slacking for the past few days...every nearly 1 - 1.5 hours of studies I wil slack by doing something else.Like what? FB or master chef for 10 minutes (at least) or lie on th bed looking at the sky -_____- or else i would really prefer to just close my eyes and sleep..

Today is gonna be my last day of studying..So please make me study !!! this is my last paper and i actually aim to get D but dont think I have the ability to do so this time...We all should know that getting a D is not as easy as saying ABC.

For the next or at least 8hrs you shall not see me and I shall not see myself touching my laptop !!

I think due to the too much of slacking, I tend to panic and get nervous at times. :S But seriously my style of studying is totally different from high school where I used to be able sit there for like ages, or at least 4 hrs straight... maybe because there is less peer pressure here with the less kiasuness...

Friday night staying at home is a BIG NO NO !!!

Since Physiology exam without sleeping, its my first ever world record to do during exam period. How did I stay up all night? Say thanks to sugarfree RED BULL

I truly recommend RED BULL better than double shot of expresso coffee. High concentration of caffeine and I assume definitely more than coffee !! I can assure you and myself that I can concentrate and stay up all night, especially burning the midnight oil.like the red bull fighting xD

Now RED BULL nearly everyday, before BIOCHEM ,the critical paper (thurs and fri) and PHY CHEM !! c'mon you can do it !!

Now my biological clock is upside down where people sleep I am awake and when people are awake I would be sleeping ==

*this is what I do when I get too bored or 'high' ? * >.<

ONE MORE !! no more slacking !! final chance for me to get through this !!!

Then it would be

F.R.E.E.D.O.M !!!! @ 5pm on 28th JUNE 2010 *mark this date*

Let me tell you, I found that my world is filled with chemistry.see i am still learning chemistry in uni and now i have one more !! the chemistry of cooking!! =P I like cooking and baking, they are considered to be my passion, i guess !!

I tried making fish snitzchels !! and it worked!! dont want to deep fry at home and also to avoid the smoke alarm from buzzing out loud!! baked in the oven and let it cooked by itself saves me alot of time as well, because the oven is doing the work, aint me !!

A very early freaking cold morning exam today on Analytical Chemistry .see chemistry again !! Understand within the study break and suppress my brain with all the theories, statistics formulas and facts!! felt so like form5 where you just memorised without understanding and sit for the exam-___-

Since it was really cold, thanks to this item below which keeps me warm. Although I wore 3 layers but I still felt cold and I dont want to wear more !! because that will make me look like a big fishball !! and also probably will have the uncomfortable feeling when writing long answers

It can lasts for abt 7 -10 hours.You can either stick to your clothes or hold it with your bare hands. Some females would use them during menstruation period, not only during winter season. This item is really cool because I feel so warm during exam without me shivering and kept thinking COLD COLD !!! i stick onto my clothes,to avoid it being seen.. I want more !!!
